WE HAVE MOVED

When I started my journey to better health, a blog was never on the horizon. As time passed and I was creating recipes - a lot of requests were coming in to start a blog for an easier sharing experience. I hesitated for a long time but a friend of mine really pushed me to do it. She offered to help. I'm not a writer and don't have a way with fancy words, therefore, for that reason I decided to keep the chatter to a minimal when posting recipes.  

I would like to thank you all for being here and for following along with me as I bake, cook and experiment in the kitchen.

I have said it many times and will continue to say, I have been Blessed with the most amazing followers - and many have become my friends.

I have been working really hard behind the scenes for a while (maybe you noticed my absence on IG), I'm hoping that what I have been working on will be an easier and more pleasant user experience on the new blog. Please bare with me as I'm still learning and navigating my way through the blogging world.

Feel free to reach out to me if you have any questions about recipes, instructions on how to make recipes or anything else you want cleared up.

Farmer Cheese Bars (Ukrainian Syrnik Cake)

Trim Healthy Mama / Keto / Low Carb / Gluten Free / Sugar Free


Syrnik is a very popular Ukrainian dessert and there are so many variations of it. I have been craving it lately and decided to recreate and 'trimify' it. I'm so happy with how it turned out.

Ingredients 

1lb sweet farmer cheese
5 egg whites (large eggs)
1 tsp baking powder
1/2 tsp vanilla extract
Almond Crust

Instructions 

1. Preheat oven to 350.

 In a bowl of a stand mixer beat egg whites until still peaks form.

2. In a separate bowl combine cheese, vanilla extract and baking powder (and more sweetener if you like your desserts sweeter), cheese mixture should be smooth. 

3. Once the egg whites have reached their peak add the cheese mixture and VERY gently, using a spatula mix until combined. Mixture should look very light and fluffy. 

 

4. Transfer the cheese mixture into the pan and bake for 30-35 minutes or until the center of the pan is set. The 'cake' will not brown, it will remain white.












Top your bars with either frozen or fresh fruit. My favorite is sliced strawberries with sweetener. The strawberries will release their juice almost turning it into a sauce. It's so delicious.

Hot Canapé Topping

A canapé is a small piece of bread served with a savory topping, it's a fancy way of saying an open faced sandwich. The flavors of these ingredients work so well together and compliment one another beautifully, I could each hot canapé EVERY day.


Ingredients for the canapé topping

1/3 cup diced tomatoes*
1/4 cup Mexican cheese mix
1/2 cup mozzarella cheese
1/2 cup cubed rotisserie chicken (or other deli meat)
1/4 tsp smoked paprika
   3 tbsp mayonnaise 
   1 garlic clove, crushed 

Instructions 

1. In a medium size bowl combine all ingredients and gently mix to incorporate all the ingredients. This makes about 1.5 cups of topping.

2. Top your favorite sliced bread or crackers (such as wasa crackers) and toast them in a toaster oven until the cheese is melted and bubbling (use foil to avoid messes and easy clean up).

2. Store the remaining topping covered in your refrigerator for up to 4 days (mine has never lasted longer that 4 days, we eat it well before than).

* red tomatoes look really nice in this topping. This year we are growing yellow cherry tomatoes so that is what I used.

Soft and Creamy Fudge

Ingredients for the Fudge

250 grams of 85% chocolate, chopped into small pieces
3/4 cup heavy cream
   2 tsp unsalted butter
   2 tsp of Pyure sweetener
   1 tbsp golden rum/brandy or other liquor (optional)
1/4 cup unsweetened cocoa powder

Instructions to make the fudge

1. Line and 8 inch square pan with parchment paper, set a side.

2. In a medium size, microwave safe bowl combine the chocolate, heavy cream and butter. Microwave 2-3 minutes until the chocolate is melted and the mixture becomes smooth.

 

3. Add the sweetener and the rum and mix really well until fully combined.

4. Pour into the prepared pan and freeze for 2-3 hours.

5. Remove from pan and cut into squares, I used a ruler to gently measure out 1 inch squares.

6. After cutting the fudge into pieces, generously dust with cocoa powder.
